Ingredients

1 Egg
50 grams of sugar
1 Pinch of salt
15 grams of almond Flour
1 teaspoon of corn starch
1 teaspoon of vanilla extract
10 grams of coconut flakes
1/4 teaspoon of baking powder
1 large banana
1 tablespoon of lemon juice
160 millimetres of heavy whipping cream

Directions

To start with, make a biscuit – To do this, beat the egg well at room temperature, in the egg add sugar, a pinch of salt and some vanilla extract. Beat until the egg becomes light and foamy – this can take 3 to 5 minutes depending on the power of your mixer.

In beaten egg add sifted almond flour, baking powder, corn starch. Mix until smooth and add coconut flakes.

Place the finished dough on a baking sheet covered with baking paper or on a silicone Mat. Bake at 180C for 10-12 min. While the biscuit is baking cut the banana into cubes and that it did not darken add lemon juice to it.

Whisk cream until strong peaks. ( In order for the cream to be well whipped it must be well chilled)

When baking is complete, break biscuit into pieces. Take a glass and put the whipped cream on the bottom of the glass. On top of the whipped cream put the biscuit then the banana and then the cream again. So fill the glass.

Your light and healthy dessert is ready.
